Lotus root is a familiar ingredient of Hubei cooking and an important part of Xiantao’s local food identity. A cut slice reveals a pattern of air channels, while different preparations bring out crispness or a softer texture. Fields and ponds are the beginning of the story; washing, cutting and cooking turn an underground stem into something recognisable at the table.

The name Mianyang remains
Xiantao was formerly known as Mianyang, a name still carried in local food and craft traditions. Keeping that older name in a dish allows a culinary identity to outlive changes in administration. The waterways and towns of the plain provide its setting. In a menu or a conversation about food, Mianyang still points towards a particular local inheritance within the wider kitchens of Hubei.
Three kinds of steaming
Mianyang san zheng is associated with steaming meat, fish and vegetables. Rice flour is important in familiar versions, while the tradition includes a wider range of steaming methods. The interest lies in the treatment of ingredients and the changing textures produced by steam. Origin stories linked to Chen Youliang belong to local culinary legend, rather than a documented recipe preserved from a particular household.
