The clear broth of Lanzhou noodles

A bowl of Lanzhou beef noodles brings hand-pulled strands into clear beef broth with beef, chili oil and herbs. The craft was added to China’s national intangible cultural heritage list in 2021.

The bowl and its five colors

The national intangible-heritage entry describes noodles served in clear broth with cooked beef, coriander, garlic shoots and red chili oil. A familiar maker’s saying summarizes the bowl as clear, white, red, green and yellow: transparent soup, pale radish, red oil, green herbs and golden noodles. The details vary by shop, but the clear broth and freshly pulled noodles anchor the dish. Lanzhou’s location along the Yellow River and at the edge of the Loess Plateau also connects the bowl to a wider food region of grain, pasture and trade.

A craft made visible

The listed craft follows a sequence: choose and mix the flour, rest the dough, shape it into strands and pull it to the requested thickness. Diners often choose among round and flat cuts, from broad strands to fine noodles. The broth requires its own preparation, with beef and bones simmered and the soup seasoned until clear. The 2021 national listing traces the modern shop tradition to Hui maker Ma Baozi and his son Ma Jiesan, and records the craft’s transmission across generations. The pull is theatrical, but consistency depends on repeated, practiced work.

A daily food of the capital

Lanzhou beef noodles are eaten across the city, from neighborhood breakfast shops to busy streets near the river. Their story is carried by technique and repetition rather than by a single building or monument. The national heritage entry recognizes the craft as centered in Lanzhou and transmitted beyond it. Pair a bowl with a walk along the Yellow River and the city’s scale becomes clear: the river forms the valley, while noodle shops serve the people who live and work along it. The dish is both a local specialty and an everyday meal.
