The Tribute From Three Rivers
How a town where three rivers meet made a vinegar that an emperor took home, and kept the recipe for three centuries.
Duli aged vinegar (独流老醋) is made in Duli town of Jinghai District and is counted with Shanxi aged vinegar and Zhenjiang aromatic vinegar as one of the three great traditional vinegars of China. The town's advantage is water and transport: it lies where the South Canal, the Ziya River and the Daqing River meet, and that confluence gave rise to a prosperous brewing industry. Vinegar making became an industry there in 1665, beginning with a single works called Lisan. In the ninth month of 1684 the Kangxi emperor tasted the vinegar when his boat stopped at the town and made it a tribute, sent to the capital every December.
