The Two Wells Behind Shiping Tofu

In Shiping's old town, sweet water for soaking and sour water for setting distinguish one tofu tradition from its neighbor's.

Sweet water, sour water

Shiping tofu begins with a local distinction between two kinds of groundwater. A Honghe prefectural cultural-tourism account describes beans soaked in sweet water and the soy milk set with naturally sour well water. The sequence makes water more than an ingredient: it is part of a craft tied to the old town's underground sources.

Not the same as Jianshui tofu

Shiping and Jianshui are both famous for grilled tofu, but their methods differ. The prefectural account says Jianshui tofu uses fermented sour slurry and sweet water from Ximen Dabanjing, while Shiping relies on its sweet-water soaking and sour-well setting sequence. Each county tradition has its own processing steps and texture.

That sequence gives the craft its geographical identity: sweet water first prepares the beans, and sour well water sets the curd. The prefectural account dates Shiping’s traditional technique to provincial intangible-heritage recognition in 2017 and the product’s geographical-indication protection to 2012. At the table, a grilled piece is the end of a process shaped by two local waters and the maker’s timing.

The same account describes more than ten operations from grinding to shaping and reports that the sour water did not produce the same result when carried elsewhere. These details anchor the craft in local materials and a sequence of work, not in a recipe that can be separated from its place.
